    Default Chicken Shrimp & Sausage Gumbo Part 1


    Wow, I only made it to the stock and aromatics but have 18 pictures to post so this will be a two part post. I hate to do it like that but with it storming outside I have too much time on my hands. A Spinner just past us about a 1/4 mile to the North. We got massive hail for 30-45 seconds, you could see the eye on the MyRadar app but no warnings were posted. I put all our cars & trucks in the shop earlier or we would be looking for body shops tomorrow. Anyway back to the Gumbo.

    So I went to Sam's this morning since I was in Gulfport to ship some packages to pick up a couple of Rotisserie Chickens. When I walked up to the counter I noticed all the Chickens were $4 but were different sizes. I picked out the 3 biggest and headed home. After pulling all the meat off the bones the bones went into a large pot with a gallon of distilled water. The tap water here has way too much chlorine, you can smell it when you shower. It is hard to season around too. My wife picked up the shrimp, we had the sausage already, so a stop at the grocery for Aromatics and we are good to go. I put a bunch of garlic next to the chicken meat container for reference. That is $12 of Chicken. If you need to feed a bunch on a budget Sam's really helps out.

    Adding Celery, Onion, Black Pepper, & Thyme to the stock greatly reduces the cooking time when assembly time comes.

    I let the stock cook for a hour while peeling the shrimp and cutting Aromatics

    Most of us on here already have knife skills but since I have time on my hands I took the pictures. I pre-slice the Celery longways before Cross-Cutting to speed the dice. With the onions I Cross-Cut the halves before slicing to get a quick dice on them too.

    I added the Shrimp heads & Shells after a hour of cooking the stock and cooked another 20 minutes. This really bumps up the seafood flavor.

    Since I'm using Garlic Sausage I put the Garlic toes in the oven and roasted them till soft. This will add another layer of flavor and smooth out the overall Garlic taste.

    The Wine Glass has Tripletail in it since I needed a bit of lubrication while cooking. Enjoy.

    This all looks delicious. This is going to be one mighty fine gumbo when finished. Glad the tornado missed you and you had vehicles all stored safely. Be careful. Supposed to be nasty here tonight and tomorrow. They canceled school tomorrow. Our ground is soaked already and I have one tree down in front yard now from the other week. I sure hope we are safe and the storm is uneventful.

    That's going to be a great Gumbo. Glad you dodge that twister. Dave I Pray you all will be safe. We are getting Rain and snow out of this one with winds above 45 Mph. This ole trailer sure is rattling. Will be out checking for loose siding when it gets day light. But so far she's holding together. Prayers for everyone tonight.
    We have some duck, smoked sausage Gumbo in the refrigerator thawing out that we are having tomorrow night. I have to make some fresh potato salad to go with it tomorrow afternoon. Can't have Gumbo around here without it...just sayin'.

    Been raining buckets here. I saw no evidence of the wind we were supposed to have on the way in to work this morning. Glad that spinner missed y'all
