Persimmon pudding was a great treat growing up! Had a tree in the front yard. Haven’t had it in years

I made 4 more loaves today but with a new ingredient. From King Arthur Flour we bought these Ginger bites. Dried, sugar coated, pieces of ginger. Man when you hit one while chewing the Persimmon bread ascends to a whole new level of good.

I found recipe's for apple sauce cake , date/walnut bread and zuchinni bread online. Looks like I will be trying them soon. My sister used to make them every year for the holidays.
