    I don't know how I missed this, those look fantastic. I like to cut my pork chops like that up, stick a piece on the end of the fork, and scoop a bit of mashed Potatoes over the bite of chop before I chomp down on it. Mix it in my mouth while chewing. As far as using Shoulder for chops I don't remember when I bought Center Cut Chops for frying only for getting stuffed with sausage. I buy Picnic Pork Shoulder Roasts and slice into chops after removing the bone with a fillet knife.

    We do stuffed chops occasionally with extra thick chops “pocketed” and stuffed with dressing. We do our shoulder streaks bone in as it allows me to act like a savage and gnaw on the bone for every last morsel.

    EAT LIKE A CAVEMAN! I just Love it. The Girls don't like gnawing meat off a bone but I think there is nothing better. I cook my Chops so hot the Skillet has a slight glow in the center. 165 degrees is cooked Pork. I get then to 158 degrees or so on a thin boneless shoulder chop kinda Blackening it as I cook it. After I pull them I immediately tent with aluminum foil to finish.

    my wife is from a place called we do not waste ANY meat , she can turn any meat item on the bone into a skeleton , fish as well , just saying .....
