    Default Scattered, Sprinkled, Smothered, and Covered

    Playing off Waffle House's call out ordering process we had a very tasty breakfast yesterday morning but I forgot to post it.

    I wanted to try this using a bag of seasoned Hashbrowns that caught my eye in the Walmart frozen foods case. Cooking in a large cast iron skillet first was 1/2 a pound of Jimmy Dean sausage crumbled. The sausage was removed to drain while some homegrown minced Bell Peppers were tossed in along with minced Boiler Onions. Once soft they were removed to a bowl while the potatoes cooked. We use a perforated silicone Skillet cover to hold in the heat while cooking the hashbrowns on lower heat till they are cooked then a bit of unsalted butter cubed is tossed in, the heat turned up, and the potatoes are given a little crust. After the heat is turned back down and the vegetables are returned to the skillet and tossed with the potatoes, the sausage sprinkled liberally over everything. After the sausage looks even grated sharp Cheddar cheese covers everything, the silicone skillet cover is placed back on to melt the cheese. Plating was done with two eggs on top. Two bites and I added Hernando's Street Taco sauce which sent my taste buds to the moon with glee.

    Yum! I get my hash browns at the Waffle House “peppered, capped and covered”. Around here my bride says that I can’t go anywhere without stopping at a Waffle House or a Speedway.I have been known to go out of my way for both…..

    That's totally something right up my alley. Love me some good breakfast food. Looks delicious and hot sauce is a must have.

    The best hashbrowns, at least for me.

    The day prior, bake Idaho potatoes, it may take a cooking or 2 to determine how many you need.
    Refrigerate with skins on
    Next day, peel and shred
    Cook in clarified butter and/or bacon grease.
    If desired, add onions or whatever you choose.
    Not just for breakfast

    potatoes and peppers and onions and sausage get burnt just about daily here .
    we add the scrambled egg last , sprinkle cheese over it and turn off the heat and cover it with a plate ....
    10 minutes or so later it gets rolled up in tortillas and ....KABOOM
