But I think this is gonna be killer.
I’m about tight, that’s a given. But sampling it, I think this is gonna WORK. Chicken, andouille, and bacon. Green n red peppers, poblano and anaheim. Bacon grease roux. White and purple onions. Celery. Thyme, basil, oregano, black pepper, kosher salt, and garlic.
Rice…
And a pone o cornbread w creamed corn and diced jalapeños added.

I should give credit, the OP was Polar Bear here, back in 08. Think someone else may have bumped it up where I saw it. Originally it had crappie instead of chicken. But my ever-patient wife is really not too fond of fish in any sort of stew, soup, gumbo what have you. So gave her a break this time. Well, except for the cream corn in the cornbread. She can’t stand it, so that was a miss with her.
