325 degrees after preheating, time reheating depends on fillet size. Tacos will reheat in 3-4 minutes, larger fillets I turn the temp down to 300 for 7-9 minutes depending on thickness. The secret to frying Crappie for reheating is allowing the fish to rest in the fry coating till the glue starts to form. After cooking we allow the fillets to cool on wire only, this prevents steam from softening the coating too much. I have posted before I have a Blast Chiller and allow the fillets to rest within a Plastic storage container with one corner of the lid up allowing air in for as long as 10 days. The fish will continue to loose water, firming up, sweetening up, allowing them to fry without the excess steam softening the coating. I do have to pour the water off the fish everyday so they do not sit in water.
Another thing I do for thicker fillets is to season the fillet directly then into AP Flour, shaking off the excess, then I let them sit till the flour works as a descant absorbing enough water to make the glue. Once I see the flour wetting out I dip the fillet into a egg wash first then right into the fish fry. This creates a very crunchy coating for reheating later too.
