    Default Hers and His, Jumbo Shrimp & Crappie Poorboys


    I'm cooking all the fresh Crappie left in the blast chiller. This time of year I back off a bit while the fish are spawning in our rivers. We don't have a lot of effective, dedicated crappie anglers and conditions are the best for another good spawn here. Using a Air Fryer I will reheat the leftover fillets for snacks. Anyway my bride for 30 years loves shrimp. It's a easy thing to fix since shrimp is available year around from the Vietnamese sellers on the sides of the roads. Here are the sandwiches I prepared for lunch.

    When I clean shrimp for salads or sandwiches the tails are shelled too, by slicing almost all the way thru while de-veining the jumbo shrimp cook much faster. I soak in the egg / liquid crab boil wash for 5 minutes before dropping into the fry coating. This coating is the leftover crab boil seasoned used for the Mock Fried Crawfish Tails. Speckled Trout curls well not like Crappie so the Mock Tails actually look like Crawfish tails fried. Moving on, leaving the shrimp in the coating for 5 minutes builds a great crust sticking the coating well for packing into a Poorboy.

    You can see the coating is pulling moisture out of the Shrimp making a glue so to speak adhering the coating and making a bit of crunch.

    When I remodeled our Kitchen the Island was wired for 220 Volts for this 15 Pound Fryer. The single basket was in the dishwasher so I had to use the Twins. I spread all the Shrimp out on the baskets since dropping them in one at a time we would have some overcooked before all pulled to drain.

    We scored some fresh baked French Bread from a local Bakery. Growing up in New Orleans a traditionally prepared Seafood Poorboy will only have good Mayonnaise, Lettuce, Tomato (Beefsteak use here), Dill Pickles, and Crystal - Louisiana - Tabasco Hot Sauce. The Hot Sauce is a continuing debate to who's best.

    So my sandwich Crappie was looking lonely in this picture so I doubled up the fillets before closing it up for mass consumption. My wife destroyed Her shrimp Poorboy too and now the both of us are sitting in a recliner. I hope you enjoy a good Poorboy soon!

    You really know how to hurt a fella. That looks awesome. I may have to go grab some shrimp and get to frying. Most places up this way don't have a clue what a poor boy is

    Couldn't stand it. I had to lay a bag of fillets out to cook tomorrow. Looks good to me.

    Both look delicious and I’d devour either or both….lol. Looks much better than the shrimp poor boy I made with leftovers from the fish house Sunday.

    I have a question. What setting do you use to reheat filets in the air fryer? I usually just eat them cold.
