It was a rainy weekend around here. So I grabbed up some Boston Butts to throw in the smoker.
Seasoned with your choice of seasonings. I used Butt Rub. Smoked at 225 degrees until I hit an internal temp of 160 degrees.
At that point they get placed in roasting pans and covered tightly in foil, placed in a 250 degrees oven until they reach and internal temp of 210 degrees. At that point the oven is set to 170 degrees and the butts are allowed to rest until I am ready to pull them. Bones fall out clean. No need to pull them.
Everything all pulled, picked and mixed ready to be bagged and frozen.
Pull a bag out of the freezer, warm it in a pot of water, cut open the bag and enjoy. Makes for a quick grab and heat meal.
