    I prefer blackened for tacos.
But hey there is always opportunity to do both at some point.

Both are great. Do em one way today and the prepare the fish the other way next time. You can’t go wrong either way.

I don't own a Blackstone (yet). How do you keep them from sticking/burning? I'm trying to wrap my feeble mind around the correct procedure before I pull the trigger. Currently, I use the wire baskets when I want grilled fish.

Quick search on YouTube and I found a video on blackened cod fish. It’s basically like using a seasoned cast iron pan. The cook starts about 3:30 mark.

You have to get your season layer good.
Then get it forever more scalding hot and drop that fish out there and it won't take very long.
