As long as you have a fire you can cook it.

Make sure your Dutch oven will sit securely on it. Also, a thermometer is important and try to let it settle in at 350 degrees for. few minutes before starting. The more oil the better the temperature stays, the more fish the more it will plunge, so add fish at a rate that allows the burner to keep the oil at temperature.

Never hurts to have enough horse power to get the oil and the dutch oven up to temperature fairly quickly. I bought a LOCO brand a little bit ago. I have not fried fish. I have used it to boil 2 gallons on water to cook Hotdogs in gor a get together the FIL had. Had plenty of power to get the water rolling.

I cook all my fish at 375. Cut up fish will not take 1.5 min. to full cook and float .

Just about any they sell as fryers or boilers will work. To suggestions, make sure burner has a wind guard around it. And make sure you get one that has the pot retainer built in. Spilling a pot of hot oil into a raging fire can lead to disaster.
