Had to post a picture, Gills fried New Orleans style, with Remoulade sauce. Soaked the fish in one egg, some buttermilk, and 4 tbls Liquid Crab Boil for 10 minutes before dredging. 370 degree peanut oil, deep fried.
Re-heated Street Tacos on the griddle before assembly...........now nap time.

Bud we have a Lodge Griddle on the center burner of the gas range. I spray it lightly with Pam Coconut non-stick spray then turn the fire on low. It heats up while I cook fish. I think any Iron pan works this is just sitting there waiting for me to use it, anyway I warm up the little street tacos on the griddle and it really helps wake up their flavor. My wife was buying them for herself, I make Jethro sized tacos but the little ones are really tasty so I switched. Also they are good warm, buttered, with beans & rice.
