I'm a big fan of Hank Shaw, who has several cookbooks for wild game. His latest book, Hook, Line, and Supper has this recipe in it for Pickled Pike.

I scaled it up 2.5x for 2.5 lbs of Crappie fillets. The pickling solution and brine were each about 50% more than I needed, and there were about 10x as many onions as I needed. You could probably use 1 medium onion for 5 lbs of fillets.

I figured I'd follow it to a T this first time, then make some variations in the next batch, likely adding banana peppers or jalapeños.

I realize there is nothing new under the sun, but this is the first time I've tried pickling anything. I'll find out in about a week if it is any good.
