Snow has me cooped up inside. So far, no loss of power.....just cold temps and lots of powdery snow! So I made some cookies. Found the recipe from years ago; thought I had lost it. Here it goes.......
In one bowl, mix 2 cups all purpose flour, 3/4 cup cocoa powder, 1 tsp baking soda, and 1/2 tsp salt. In another bowl, use a mixer to beat 2 1/2 sticks real butter (softened), 2 eggs, 2 cups white granulated sugar, 2 tsp vanilla. Add dry mixture to wet mixture in about three stages. *I have added chopped pecans here and that turns out well. Chill dough for about an hour. I use a small ice cream scoop and I usually get around 40 cookies. Roll little walnut size dough balls in white sugar before baking at 350 for about 8 minutes. Let em cool completely before asking off cookie sheet. Here’s a pic of the little scooper that I used with a penny by it so you could see the size. I think it’s a melon baller scoop.
