I finally went and snagged some.
And yes, they are a pain in the butt to clean. That being said, the flesh is fantastic.
Grilled some smaller ones and the meat pulls easily away from the bone.
Fried some that I filleted out.
Both are fine eating!

Had some at one of our Spring Fling events several years ago that M R DUX brought. They were "nuggets" rather than fillets, but were breaded/fried just like the Crappie fillets. And while they were the most of the few leftovers by count, there were no complaints I'm aware of as far as taste/texture. To me they tasted a little like "White Bass" that still had some red meat attached (a little more "fishy" tasting than Crappie), and the meat texture was a bit more dense than "regular fish" (Crappie, Gills, Bass, toothy fish, etc).

The meat has a texture that reminds me a little of redfish, more firm than most fish. But the flavor was very mild. I did put them on ice immediately after catching them as I’m told they start to spoil very quickly.
