i do similar but use vacuum sealer bags...no problems
I take my fillets and “suspend” them in water with a little salt and freeze them that way. No freezer burn and very fresh upon thawing. I use the plastic ziploc plastic containers btw.

Never tried adding salt to the water. I assume you are using Sea Salt. I have historically shared my excess fillets but with the rise in food costs I plan on putting up more for our use. Also in the plans are different ways to process the fillets before & after cooking, for making other dishes.
we put our filets in quart freezer bags , we fill them full of water and squeeze the bag lightly when we seal it in the sink , no air and fish done this way last about forever fresh , no salt added to ours though

I vacuum seal mine, no water. Saves freezer space this way.
