The wife and I are not big fans of tuna fish but love crappie.
Tried this and it’s a staple around our house now.
Preheat oven to 350.
Cover a cookie sheet with alum foil.
Place baking rack on cookie sheet.
Pat dry crappie filets, spray filets with Pam olive oil and season with salt and pepper.
Place on baking rack.
Put in preheated oven for approx 10 minutes or until filets turn white.
Remove from oven and allow to cool.
Remove from baking rack and place in covered Tupperware bowl and place in frig overnight.
Next day crumble the chilled filets and combine with your favorite tuna fish salad ingredients.
We use hard boiled eggs, celery, onion, chopped bread and butter pickles combined with a little Miracle Whip.
Serve on toasted wheat bread, slice of tomato and lettuce and enjoy.
This also makes for a great dip to serve on a holiday with crackers. Truth is that it’s the first to go.
