Default Cooking temp in a skillet?

Hey guys, I am wanting to fry some crappie for my friends here at school for lunch one day. I am going to try that potatoe flake receipe. What temp do I need to have the oil? I will be in an unclosed kitchen and cooking on a stove. I am open for information.
    Thanks, Jerry

Spit in the pan, if it pops & spatters it's hot enough. And you'll probably get all the fish to yourself...
    I have a jig with a face like this!
