How long are Crappie fillets good for if they are frozen in bags with water? No air for freezer burn.

Have kept them 3 yrs. but was a long time ago . I now fish to a quota of 75 crappie, 50 red ear, 50 blue gill, and 50 catfish . This way I have the year covered without having fish sitting in the freezer, when they should be spawning .
The key is how you freeze them and then how you thaw them. 2 years won't be an issue if done right. I have heard of people eating them much older than that with no complaints.
I'm sick of following my dreams. I'm just going to ask them where they're goin' and hook up with them later.
