    Default Coconut Crappie


    Ingredients:
    CRAPPIE
    Panko (extra crispy)
    one bottle pina colada mix (I used non alcoholic)
    egg or two depending upon how much fish you are frying.
    shredded coconut
    extra virgin coconut oil
    fry krisp batter mix mix (Fry Krisp Batter Mix, 10 oz (Pack of 12) - Walmart.com)

    Directions Dredge fillets in dry fry krisp batter mix (or flour with baking soda)

    Stir egg and pina colada mix then dip fry krisp coated fillets in egg/pina colada mix

    put one half panko one half shredded coconut in shallow pan. dredge fillets in this mixture after having dipped in egg/pina colada mix

    Fry in coconut oil. Enjoy.

    my wife likes a dipping sauce like at red lobster. I like mine plain.

    I had coconut crappie about 3 years ago... feel in love in my first bite! Been looking for a good recipe like this one. Never heard of the pina colada mix before but sounds awesome. Thanks for the post!
