    I use heavy cast iron pot to hold heat . This slows temperature swings and helps prevent burning oil . I use Canola oil set 350 to 375 , if it gets to close to 400 , I'm turning heat down fast . For most beginners I suggest using a good thermometer .

    Silly question here, but what if you don't have a fry=-daddy and just use a pot or skillet on a stove top? I keep reading 350 degrees, but how can you tell when all you have is low, med and high? Sorry for the ignorance.

    I can't stick a thermometer in hot grease ... ?

    it's a grease thermometer you can buy them at any grocery store... gonna keep the dial somewhere between Med. to High

    Set your stove top to 7. Give the grease (Peanut oil) 4-5 mins to heat up, and cook 6 minutes. Great suggestion!
