My wife makes her living teaching food safety, preparation and the likes. I drive her crazy with my cooking when I just use a little of this and a lot of that so here goes.
I mix 2/3 yellow cornmeal with 1/3 self-rising flour, some baking powder (tsp or 2), 2 eggs, cajun seasoned salt (pretty good shake) and black pepper (another good shake), a whole chopped medium onion, 1 small can of cream style corn, and orange juice. I mix all the dry stuff together then add the eggs,corn, and onion and wet it out with the orange juice until it is moist but still firm. I set it aside for an hour or until I'm ready to use it. I may put it loosely covered in fridge overnight. I then take a small ice cream scoop and put the mix into 350 degree canola oil. I want the mix to sink when I drop it from the scoop but soon come back to the top. Cook till brown but not dry in center.
Anybody who puts sugar in hushpuppies or cornbread needs to have the ghost of Lewis Grizzard visit you often! Cornbread with sugar is cake!!
