Chowder Made EASY!
So, I had some walleye fillets burning a hole in my freezer (later tried with crappies). I searched and searched for a good chowder recipe that I would like to try. I finally found one (that I altered) that was quick, easy, and really good. Most is made in the crock pot. This recipe also does not contain a lot of heavy cream (might be healthy) but I'm not sure.
3 Cups Water
1 Lg Onion Chopped
6 strips of Bacon (I actually use cubed Venison sausage)
3 Lg peeled potatoes (cubed)
8 to 10 crappie fillets (cubed)
2 tsp salt
1 tsp pepper
1 tsp lemon pepper
1 can cream of mushroom soup
1 can evaporated milk
corn starch
In a skillet cook bacon until crispy. Sautee onions until they are transparent. Drain grease and crumble bacon
Combine all ingredients in a crock pot (except evaporated milk, soup, and corn starch) Cook on High for 3 hours
Add evaporated milk and cream of mushroom soup and cook for another hour. (you can also use clam chowder soup)
Chowder is done when potatoes are to your liking. If you want a thicker chowder, combine a Tbsp of corn starch with water
in a separate bowl and stir. Add to Chowder and stir. Should thicken in a minute or two. Repeat until desired thickness is established
Nice part about this recipe is you can add anything you would like. Clams, Bacon, sausage, carrots, celery. Above is the basics.
