I scale the fish, then fillet off side...leaving skin on. I then brush fillet w/ olive oil & melted butter....add Cajun seasoning, salt/pepper to taste...cook on foil skin side down. Don't be afraid to put Cajun seasoning on...you can try some w/ little, some w/lot. They may not be quite as good as fried, but with a good cold beverage..they're pretty tasty. Don't overcook it....when it starts to get a little flaky, taste test it. Let me know how you like 'em.

May not be "grilling them" by definition - but it is one way to cook them on the grill!

I put fillets into an inexpensive aluminum tray and with the grill lid closed - slowly simmer them over low heat - continually basting them with butter or EVOO. Use your favorite steak seasoning. I also use lemon sometimes.

Move the tray around - it will "burn off" the grill residue, while the smoke created will slightly flavor the fish as well.

Does anyone grill the fish whole? I'm talking leaving the head attached just scaling and gutting. Kinda like a trout. I'm toying with this idea for summer time grilling.

I tried putting my fillets in a aluminum grilling bag added butter salt pepper then ranch stoning mix and cooking them on the grill. They were tasty if you like ranch. These I just caught I'm gonna mix half&half Italian and French dressing and cook a few . Ill post how they come out.

I melted some Land of Lakes Garlic and Herb butter and coated some mahi-mahi fillets then sprinkled some creole seasoning then placed a hot grill. Going to do the same thing to some fresh crappie fillets when I catch a few.
