Well, I hate to even think about the day I go to the Doctor and he tells me nothing cooked in grease..... That would be a sad, sad day.
Now I'm hungry!....love those home made chips...I do them too, do you twice fry them to get them crispy? I do mine at 260 for a few min. pull out turn up temp to 350 and hit them again to get them crispy! I soak mine in Ice water to get some of the starch out then dry them really good on a towel! Then fry!

I'll have to give that a shot the next time I fry tater chips mine always stick together and stay soft that might help (or if I would get in a hurry to eat all the time)
