I can't taste a difference, But everyone has a different opinion.....
Can't say that I've ever noticed a difference. Maybe since blacks generally inhabit clearer water, and whites murkier water? Just a guess.
Even a blind pig finds an acorn now and then.......

Well I have not run into any more whites lately but I did talk to a group of guys in my local club and they all could tell the difference in the meat structure between the blacks and whites. I will give them another try when I get my hands on them.

cant tell the differnce when they are cooked both are very tender and will fall apart if not carefull when cooking.catfish will remain firm and will fall apart.big difference in my opion.i like both
I will say the "white" seem softer than "black", but then the water they are caught in may make a difference. Here in the north, after June all crappie get soft and very few people keep them after mid-June.
