    On the west coast they make salmon jerky that is excellent. Probably needs to be a firm bodied oily fish to stand up to the smoking or heat, just my guess, but I would think crappie is too delicate a flesh but I have never tried it.

    Be careful eating under cooked freshwater fish most have parasites!

    from the article i googled it said exactly the opposite. crappie is excellent and advised to stay away from catfish and other oily fish. also said you could cook it first then dehydrate it. if i cook it im eating it. another link said you had to use fresh fish, not sure if it would matter that much though.
