i do this with gills all the time but never tried it with crappie. im dont see why it wouldnt work though. take fillets and roll them up head to tail, then stick a tooth pick or two in it. this keeps it in a roll to be cooked. bring a large pan of water to boil. i season the water with a lil salt. drop in the fillet rolls in the water and cook for 3-5min. gently remove(they are tender!) and place on top of ice in a bowl. when they are all chilled dip them in some melted garlic butter and/or shrimp sauce. i can really hork down a mess of fillets like this and kids love them too.

Tried it with crappie one time. The fish seemed more crumbly with the crappie. Bluegill are awesome. I may have cooked the too long. Let us know how they turn out.
