    The absolute best breading is "original Keebler Club Crackers." Put the crackers in a big zip lock and roll into crumbs. Crack a couple of eggs and a little water {don't use milk, it will burn} and beat them up. Another zip lock with a little all purpose floor. Rinse your fillets and shake in flour. Dip in the egg wash then coat with cracker crumbs.
    Fry in hot oil a couple minutes , depending on size of fillets. I like canola oil.
    No seasoning!! There is a great taste in the crackers that compliments the crappie to perfection.

    I like Italian Bread Crumbs and Fryin' Magic mixed 50/50.
    Dip fish in Evaporated Milk then in the "Italian Bread Crumbs/Fryin' Magic" mix.
    I also fry them in Canola Oil.
    Make sure the oil is hot by dropping a pinch of mix in the pan and if it spatters/rises then the oil is ready.
    Also don't let the fish burn or the oil will take on that taste so pay close attention.

    Ain't but 1 thing I fry fish in. Zatarains Seasoned fish fry.
