Keep them alive and bait noodles(jugs) . Then dress(fillet) and fry catfish.

Over 40yrs ago, a gentleman I knew did the same thing with Bluegills & other panfish. No "brim" was too small for him. He'd just scale'em and clean'em (remove head/innards/fins) and run them thru a meat grinder (didn't have "food processors" back then). Then he'd use the meat for "croquets" !!
