I tried the Crappie Tostada recipe that I found on YouTube from Hunt-Fish-Eat. Pretty simple, and came together quick. Basically marinate fish with a little onion, garlic, cilantro, juice from a lemon and lime and a dark mexican beer. I just used Amber Bock. Also added a bit of olive oil to keep lemon and lime from cooking the fish as instructed. Then poor off the beer, and pan fry in a seasoned skillet with a little taco seasoning over the fillets. Served the fish on small tortillas covered in black beans and lettuce. topped the fish mix with a little monterey jack cheese, salsa, and some lime cilantro sour cream i made. Worth a try. It will be used again.
