    I had an older cajun woman staying in a cabin next to us on the White river and she cooked trout like this but used ground up cheezit crackers instead of panko and added smoked salt. Good Stuff!!!

    To really knock this recipe out of the park, add a touch of garlic and a decent amount of Italian seasoning. My wife and I just can't stop eating fish after finding this recipe and now we experiment with it nearly weekly.

    I liked the sound of this. In a hurry and crappie filets buried too deep in the freezer. Found a pair of snapper filets from the fall trip. I modified it a little by eliminating the thyme and instead using Cajun seasoning and granulated garlic instead. My local grocery store had no fresh parmesan but did have a grated Italian cheese that included parmesan. I sprayed my pyrex dish with olive oil and substituted extra virgin olive oil for the butter. I also sliced a few Kalamata olives and spread over the top. This will definitely become one of my regulars. THANKS VERY MUCH FOR SHARING THIS RECIPE.

    Tried this tonight. Used lemon pepper seasoning instead of the tyme. Had the fish with baked sweet potato and a spinach salad. Turned out fantastic, thank you for sharing.
