Never weigh my bags when I put them in the freezer. For me it depends on the size of the fillet's your cooking. Better to have a few fillets left over than not enough for everybody. If I were cooking for 20 people who like to eat fish. I would cook around 85 to 100 fillets. It helps if you know the people that will be eating it. By this I mean. Some of my friends can eat up to 10 pieces of fish. Others may only eat 1 or 2 pieces.Woman may not eat as much as the men but, not always..lol
I'm sick of following my dreams. I'm just going to ask them where they're goin' and hook up with them later.

I normally cook 3 to 4 averaged sized fillets per person and that is almost always more than enough when combined with all the other fixens at a fish fry but since you asked how many pounds I would have to say around a half a pound per person.
When I smoke food for people I always allow a half a pound of meat per person and I almost always have some left over. It all depends on the gender and ages of the people you are serving. As a rule women and children will eat less but the men in the group will even it all out. If you have a majority of women and fewer men you can reduce the amount per person but if the opposite is true then you will need to increase the amount per person.
