    Default Question about my Cajun Fryer


    I've got a 6 gallon Cajun Fryer that I like but I don't think I'm getting the gas flow/flame set just right.

    I mainly do a smalltime commercial thing where I have a potato slicer that gets them paper thin. I fry them and sell them as homemade chips.

    It takes about 20-22 minutes to warm up. The manual says 14-16. Also after cooking about 4 orders of chips (average is 2 russet potatos that I buy at a grocery store so they're not huge spuds) the temp drops so far down I have to stop a couple of minutes to let it heat back up.

    I open the canister all the way and use the thumb valve to set the flame. The flame is pretty much all blue and it appears there is about 1/2 to 1 inch from the burner surface to the base of the flame itself.

    From all the great reviews I've seen of this fryer I'm thinking that it ought to keep right on frying and not drop that much. Maybe there is too much water in the potato for it maintain temperature cause I fry all of the water out.

    Any suggestions or guidance would be appreciated.

    May be that the regulator is low pressure. A low pressure fixed regulator may not be allowing enough BTU. My regulators have all been replaced with adjustable pressure up to 60lb.

    Here is a link to examples of the types of adjustable regulators. I have to be careful not to overheat. You can always turn them down.

    i have a six gallon cajun fryer and no problem with mine crank the heat up on it you may need to unhook every thing and make sure regulator is in the off position and tank is valved out then hook every thing back up

    them valve tank in first and then regulator

    If you are cooking food that is not frozen I would think you shouldn't have a problem like that. I would contact Cajun Cooker and explain your problem is. It might be a defective regulator or your air mixture is off.

    I agree with the others it's the regulator. Mine went bad and I could not get the temp to stay up.

    I had the same problem and the fix was to clean the little hole in the regulator. I never knew that you have to do that periodically. It will be a small hole that you can stick a piece of wire ( straightened out crappie hook works great) in the hole and ream it out. Once that is done, you may be surprized at how much more heat you will get !!

    Other things that might affect the temp is if your cooking outside and the wind is blowing or how heavy (thickness of the pan), the heavier will hold the heat better. As far as the wind you might have to put up a wind block.

    x2 Dont know what part of country your in but down here we have dirt dobbers. Wasp like insect that gather mud and will stop up any little hole they can find. Cook on a cajun fryer all the time and i bet the little hole is partly blocked or stopped up with something.

    Did you get here fixed?
    they have a new hose valve and regulater. I put it on mine and it works well.
