A different coating
So, I saw this commercial for french fried onions and the suggestion was to crush them and then coat boneless chicken breasts with the onion crumbs and bake. Hmmm . . . . . we tried it this week and it was pretty good.
So now I'm thinking about trying it with crappie fillets. I'm a little concerned that the onion might overpower the fish, so I'm thinking about using 1/2 crushed fried onions and 1/2 panko bread crumbs and seasoning with lemon pepper.
How does this sound or has anybody tried it yet? I think I'll give a whirl in the next couple days.
