Well, I've been reading this thread for quite a while and finally gave this dish a try as it sounded so darn good. Talk about a winner, this is one heck of a dish and I will make this again as it is very good. Was a bit salty for my taste but will cut back on the salt the next time I make it.
Only additions I made to the original recipe was that I added some red pepper and used the panko breadcrumbs.
I tasted a small piece of the fish after boiling in crab boil and man, that was some good tasting fish right then, it was all I could do to not grab a fork and dig into it then.
I took pictures at each stage of preparation and have included them below.
Picture #1 - Boiling the fillets
Picture #2 - Boiled fillets - drained and ready to cool
Picture #3 - Prepping the mix/sauce
Picture #4 - Making of the cakes (Made a few smaller for appetizers)
Picture #5 - Finished product cooking with cast iron in butter (man, these are really good)
If I remember right, I used 15 fish (30 total fillets) for this meal. I could have made the cakes a tad smaller but I wasn't really worried about portion size. My buddy and I devoured these things with a couple of cold ones and we were some happy campers. Even have 3-4 left over for sandwiches. Filled us up and we were happy.
Great recipe and will make again and again. Glad I gave it a shot. This recipe is a winner!

I had a bunch of mixed fish in qt bags in the freezer and decided to use two of them to try this out. I made some mods to the recipe and will have to make a few more, but the patties were good. I boiled the fillets, but I only had Old Bay instead of the crab boil. Next time I will use more Old Bay, as it really did not soak in too well. Cooled them off and flaked them. Then added about 1/2 cup mayo and one egg. Then I cheated and added a box of Zatarains Cajun Crab Cake mix. Let sit overnight, pattied it into eight 1/3lb patties and put them back in the fridge. Heated up a pan with equal parts butter and bacon fat until the water boiled out of the butter. Put two patties at a time in the pan. Light brown was 4 minutes per side, dark brown was 5 minutes. Don't move them until time to gently flip over. Keep warm in the oven until ready to serve. Nice big bun with mayo on both sides was good. A slice of American cheese went well too. Anyway, if you prefer the taste of Cajun over Old Bay, this was good. I lived in MD and prefer Old Bay. Anyway, a great use for mixed fillets if you don't feel like deep frying.
how long do you boil the fish
I had 60 fillets and boiled them for about an hour. After boiling I took the fillets off the heat and let them cool on the stove in the same pot for around 45 minutes to an hour before I placed them in the fridge overnight.
Depending on the amount of fillets you're boiling, you will get a good idea how long to cook them because they will get very delicate and start to fall apart. Use your judgement and you will do fine.
Enjoy.
can you bake the fillets instead of boiling them
