Darryl... I noticed that the crappie cakes recipe on your site calls for "raw" chopped crappie and it says to cook for 2-3 minutes per side. Most recipes I've seen call for flaked filets which means they have already been cooked and also call for 5-6 minutes per side. Have you tried it both ways (raw and cooked)? Does the meat thoroughly cook in 2-3 minutes?
I've not tried it with flaked crappie in the mix. I make my cake a bit thin, little harder to work with but that's manageable, and yeah the fish cooks completely. Seems to me the flaked crappie would fall apart enough to disappear in the mix. I like to see small chunks of fish in my cake. But I'm sure either way would taste the same.

Darryl boil some, don't handle it too much, make some big ole thick cakes and brown them on each side. Give it a try and make sure u boil the crappie in crab boil.
