Read through the whole thread and didnt see any mention of this, which surprised me.. But, I love this breading for my crappie. Just wish I could find the right mixture of spices to add some heat to it. It's Zatarains New Orleans Seasoned Fish Fry. Give the fillets a 10-15 second bath in ice/salt water to really firm the meat up, toss them into a ziploc bag of this breading mix, and into the fryer they go!
This thread has given me some new breadings to try though. Hopefully I can find them in the stores!
admile3, I have used this for years. Have tried others but always came back to Zatarains Seasoned Fish Fry. I purchase this product at Sams Club for about $6.00 for a big jug. Must be a gallon or more. Have never tried the ice water treatment but it sounds good. Will do that next time I have a fry.

I use Fryin' Magic for breading, but a can of beer, an egg, and tablespoon full of mayo (whipped together with fork....mayo will be lumpy) to dip fillets into prior to breading them with the Fryin' Magic. I get a lot of compliments on the fish I cook. Great......now I'm hungry!
