    Nothing is better than salt, pepper, and white corn meal. Why hide the flavor of such a great fish with cajun seasoning. Save that for the white bass and spoonbill.

    Roll fish in mustard......
    roll in Zatarains seasoned mix......
    peanut oil at 350 deg until they float.....

    are the hushpuppies ready yet......sweet tater fries.......
    that KFC cole slaw ain't bad either

    that does it........gotta thaw some fillets.....
