Everglades Seasoning sprinkled directly on the fish, a little old bay sprinkled directly on the fish, and then dredged thru finely ground white or yellow cornmeal. UNBEATABLE and much cheaper than those prepared meals.
I can't believe that Everglades Seasoning has not been mentioned yet. It is a fantastic seasoning, that I figured some of the Alabama and Georgia guys might have mentioned in here.

On a side note: Am I the only person that sprinkles the seasoning directly on the fish? I've found that you use much less seasoning and achieve the same effect.

Read through the whole thread and didnt see any mention of this, which surprised me.. But, I love this breading for my crappie. Just wish I could find the right mixture of spices to add some heat to it. It's Zatarains New Orleans Seasoned Fish Fry. Give the fillets a 10-15 second bath in ice/salt water to really firm the meat up, toss them into a ziploc bag of this breading mix, and into the fryer they go!
This thread has given me some new breadings to try though. Hopefully I can find them in the stores!
admile3, I have used this for years. Have tried others but always came back to Zatarains Seasoned Fish Fry. I purchase this product at Sams Club for about $6.00 for a big jug. Must be a gallon or more. Have never tried the ice water treatment but it sounds good. Will do that next time I have a fry.
