    Hey neonmoon, I've used Fryin' Magic on it's own and like it real well. I'm going to try
    the beer,egg and mayo next time i fry a batch, sounds good. thanks
    I also want to try to find Zatarains Fish Fry some of y'all mentioned..

    My dad is in his mid 80's (he's cooked and eaten a fish or 2 in his time), and has told me more than once I make the best fish he's eaten. My aunt said she couldn't (well, wouldn't) eat catfish, until she tried some I'd made....she changed her mind. I used to have a family fish-fry once a year (been 5 years or so since I've had one), so I use a stainless steel pot on a turkey fryer to deep-fry. Let me know how you like it. Buddy of mine gave me this recipe decades ago and I've used it ever since.

    I would definitely recommend doing the ice-water treatment to them. Its not as important with freshly caught fish, but for fish that might have been frozen, it really helps to firm that meat up and get it fluffy as if it were cut off the slab just minutes before. I can notice quite a huge difference in crappie filets that have not been dipped in the ice water pre-battering, and those that have. Let me know what you think!

    1/2 cup flour 1 cup aunt jamima white cornmeal 2 teaspoons adams garlic powder 2 teaspoons zaterans spicy cajun seasoning 1 teaspoon celery salt soak filets in buttermilk 15 minuits roll in mix fry till golden brown and devour

    I like the corn meal and flour mixed with a little sugar and dip the fillets in an egg and buttermilk mix before breading

    This thread has given me some new ideas for the next time I fry up some crappie. I've been dipping the fillets in eggs, beer and milk before using Louisiana fish fry in the blue bag for some time and love it. I got some Zatarains this year b/c it was on sale and it's been pretty darn good but I'm almost out. I'm definitely going to try the putting the fillets in ice water and using Neonmoon's suggestion by adding a tbspn of mayo. Thanks for all the info...I sure am hungry!!!

    I have just cleaned up the aftermath of a andy's mix fish fry. I like a mixture of white mix and red.I would like to know who likes dry mix,against a wet batter.I generally do not have the time for a wet batter.I find putting the fillets in a salt water brine firms the flesh and takes away any "fishy" taste the fillets may have.A plate full of crappies,home fries,and home grown tomatoes,and cucumbers It don't get no better than this.Don,t forget the Stroh's.

    I like Dry mix over batter for sure. For me anyway.
    I'm sick of following my dreams. I'm just going to ask them where they're goin' and hook up with them later.
