I think the chances I'm taking with ingredients will bite me at some point but I have been conjuring up a Cherry Bread Recipe in my head for a while so here goes;
3-1/2 cups Bread Flour
1-1/2 TSP Salt
3 TSP Baking Soda
1 TSP Ground Nutmeg
1/2 TSP Ground Cinnamon
2 Cups Sugar
1 Cup Unsalted Butter melted and cooled to room temperature
4 Large Eggs room temperature beaten
2/3 Cup Brandy
1 Can Cherry Pie Filling Pureed in a blender
1 Cup Chopped Dried Tart Cherries
1 Cup Maraschino Cherries quartered
1 Cup White Raisins
2 Cups Walnuts chopped first then toasted
Preheat your oven to 350 degrees. Spray your pans (use metal pans).
Add first 6 ingredients in the large bowl to mix everything then whisk to combine.
In another bowl combine all the wet ingredients
In a third bowl add your fruit and nuts. I tossed the fruit in a spoon if flour to keep the
pieces from sticking to each other.
Make a well in the center of your dry bowl and add all the wet ingredients mixing to combine, I went till smooth. Then add the fruit & nuts and mix again.
Pour into your baking tins keeping in mind to break up the batter evenly.
I start with a toothpick checking for doneness at 40 minutes, if the toothpick is still wet keep adding five minutes for a total of 2 times. If you still have a wet area in your bread turn the oven off and rest that loaf another 5 minutes.
Remove from the baking pans to cool on a rack after 10-15 minutes out of the oven.
