• Waffles w/Fig Compote Reduction and Pork Shoulder Bacon



    This is a breakfast treat, very tasty combination of cooked Fig Compote, spices, waffles, and Pork Shoulder Bacon. Sam's Club sells the bacon. Here the waffles are a recipe from Southern Living, very light like Gatlinburg, TN Belgian Waffles. The figs are from California, dried to preserve, I eat a lot of dried fruit so they are always on hand. So here is the basic list.

    1 cup diced dried figs (California Whites used here) diced or chopped
    1/4 cup Lite Karo Syrup
    1/2-2/3rds cup water
    1/8 Tsp Vietnamese Cinnamon
    1/4 Tsp All Spice
    1/8 Tsp Cayenne pepper
    3 slices pork shoulder bacon rendered and chopped
    Waffles



    I combine first 6 ingredients in a pot so the figs stay shallow. Simmer 12-15 minutes adding water if needed as the figs re-hydrate. After the bacon is ready the waffles are cooked keeping the figs & bacon warm till needed. As the waffles come off the iron and are buttered the first is topped with the chopped bacon. The second waffle is buttered then topped with the fig compote reduction.
