    I use a knife to fillet my Channels and Blues. But Flatheads are usually larger and we skin them. Then fillet off the meat. Besure and not waste the belly meat as it is the best part on a Flathead.

    I use an electric knife on catfish. I have found certain knifes work better then others. Some last longer. The only one sold at Wal Mart and Bass pro that I do not like is the American Angler. It cuts good but get so hot you can not hold the knife and the motor does ot last very long.

    I fillet them as any other fish as well, using a regular fillet knife. I skin them after they're filleted, then trim-off any of the yellow fat. Never used an electric fillet knife though, going to try one sometime & see if I like it or not.
