Theres still guys around here in Indiana that noodle for snapping turtles. Hard to beat turtle soup but if I had to noodle for it I would make mock soup. I use a trot line to catch mine generally catch some catfish as a bonus. Now I bet there are a lot of folks reading this that never heard of Turtle soup. Must be a german thing not sure but don't knock it if you haven't tried it.

I could'nt resist that one 49.Grab his head with plyer's and cut it off.Insert a waterhose in the neck and pull the skin up over it and let the water pressure go.That will loosen the skin around the turtle.Cut all foot area off.Lay the turtle on it's back and with a sharp knife begin to cut the seam that will seperate the bottom shell from the top. After that remove bottom shell and cut the skin away and work the meat out. There are other way's im sure that's how I do it.
