    I need to ask a stupid question, only stupid because I dont know the answer. How do you fillet a Bream, they are so full of bones, I am just wondering, I have never done it before. They are mighty good eating though!!!!

    Same way you fiillet a Crappie. Cut straight in behind the gill plate,turn the blade and cut along spine, through the ribs to the tail. Flip the fillet and remove the skin and cut out the ribs. Some people like to scale the skin before filleting and keep it on the fillet. Pan fry the fillet with the skin side down. Or for the smaller ones, cut off the head, scale, gut and cook whole. The meat comes right off the bone.

    My uncles always called them "government bream." We call them redears. Whatever name you call them, they are a blast to catch. A friend of mine always says you have to get "down and dirty" when you"re going after them bulldogs! Good eating too. Looks like big time fun. GTT
