    i really like cooking those picnic shoulders...i think they have a little more hammy taste than boston butts and i like that

    They don't get a great bark on the edges but they stay juicy

    The butts and shoulder does have a slightly different taste. I use a pretty good injections that gives them a similar taste. What kind of wood do you guys like to use?

    I like to rub it lightly with mustard helps the rub to stick and helps make a good bark.(you can't taste the mustard)

    At times I have also coated the meat in mustard and it does help the rub adhere a little bit better. I am also a big believer, during later stages of the process, when the meat has plenty of smoke to wrap it in aluminum foil. I usually put a little apple juice in the bottom. This step really helps with the tenderness and moistness. Oh well, as they say, there is more than one way to cook a pig.
