my local subway just renovated their store and the manager gave me the white cuttin boards they use. i just cut them to fit over my sink in the garage. now i just do my cleaning and then clean out my sink.

prowl around old junk shops or catch somebody tearing down an old house (40's-50's) If has the old porcelin covered metal sinks with side boards either double or single sinks grab it up. Probably get it for scrap metal price. These old sinks work great and virtually indestructible.

Here is a pic of my cleaning table, It is a stainless table with casters I bought at Sam's then covered it with cutting board material and cut a hole in the middle so I can put a garbage can under it tho catch all the scraps. It is the right heigth so you are not hunched over and end up with a pain in the back.Attachment 15358

I have a granite picnic table (Elberton, Granite Capital of the World) in the backyard and all else is needed is the water hose and a cutting board. Works good and easy cleanup. A sink might be nice but not really needed for filleting fish.

I don't have a pic, but I use a stainless steal prep table from a restaurant. Its indestructible, easy to clean and a comfortable hight. Look for them at flea markets or restaurants going out of business.
