ahhhhh.... I use unpainted heads most all of the time and catch plenty, so My answer would be no color.
Any color as long as its chartreuse.

I use plain (no color) a lot too.
Currently a non-fishing slacker! (not for too much longer)
Picking one is really tough, but I like this combo a lot and have probably caught more fish on this than any other. I also use it with a Roadrunner head. Oh yeah the tail is actually FL. Yellow which some people also call chartreuse. The green version of chartreuse is actually FL/ Chartreuse. I know this really looks lik the green version in this pic, but it's not.

Look at any store collection of jigheads, and see what colors are most prevalent ... you'll see white, red, chartreuse, and unpainted. The mfg's of bulk jigheads don't color their products (with these colors), just because they like them ... they do it, because these colors work.
If I'm picking a jighead to use .... out of the previously mentioned selection ... they'd fall in line as such :
unpainted
Chartreuse
Red
White
in that order, and based on what color(s) the plastic body, I'm adding to it, was. When chosing a solid color plastic body, I'm normally chosing a matching colored jighead (first) ... and a totally contrasting jighead color (second). Matching jighead & body colors, that have proved most productive (for me) are Pink/Pink & Chartreuse/Chartreuse. Beyond that ... I'm mostly using a unpainted jighead & dual colored plastic body (with Chartreuse tails, 95% of the time).
Chartreuse & Limetreuse are variations on a theme ... Chartreuse being more yellowish green & Limetreuse being more greenish yellow. One color that doesn't seem to be used so much, that should be given more consideration, is a plain "green". There's too many fish species, with "green" in their body coloration, to not give it more credence. IMHO
