    Normally, the grease is so hot that any water or air is pushed out and will rise to the top.

    There use to be a crappie tournament at a local lake and some guys would inject a needle in the belly just behind the bottom fins where the breast plate ends. I use to do it right away if I was keeping the fish to realese later.
