Perch Cocktail
3 slices lemon
2 tablespoons salt
12 cups water
1lb. yellow perch,skin removed,cut into 3x 1/2-inch strips
Crushed Ice
Seafood cocktail sauce
In a 6-quart Dutch oven or stockpot,combine water,salt and lemon.Bring to a boil over high heat.Reduce heat to medium.Add perch strips.Cook,uncovered,for 3-5 minutes,or until fish is firm and opaque and just begins to curl up.Lift fish out of water with slotted spoon and immediately plunge into ice water.Leave fish in ice water until completely cooled.Serve fish strips on a bed of crushed ice with cocktail sauce

Cocktail Sauce
1 cup chili sauce
2 tablespoons fresh lime or lemon juice
1/2 teaspoon prepared horseradish
In a small mixing bowl,blend in all ingredients. Chill for at least 45
minutes to blend all flavors together.
